I'm interested in writing a book, eBook, or a guidebook (maybe). However, I'm not interested in writing the typical destination book or Top 10 book. I like human interest stories. Do you think this is a viable market?

Absolutely. Travel writing is great because you have many angles for articles or books. Write what interests you, but at the same time remember that you're writing for your readers. There's a reason why National Geographic Magazine, Time, Newsweek and many other magazines are still around today. People are interested in what is happening around the world.
If you travel to a country, think about the people and culture. Do women have rights? What about child labor? Is there poverty? Is it a Blue Zone?
You have many angles for book and eBooks. Record your experiences and work on the project that you're most passionate about and want to complete.

I agree with Rebecca - people will always want to read about other people. You might also consider a format that is like a collection of [shorter?] stories about people in a particular place or culture.
