How many keywords could you have?

I don't think you should limit yourself in terms of the number of keywords that you want to use to draw visitors to your site, but you should choose only 2 or 3 keywords/phrases to focus on with each article or blog post. More than that and you'll confuse the search engines and dilute the few you really want to rank for.
The important thing is to make sure that whatever keywords you do use are relevant - and this means periodic keyword research since you'll discover new keyword that you didn't realize people were using when searching for topics that your site encompasses. If you keep your keywords highly relevant, then the search engines will have no confusion over what your site is about.
Another thing to pay attention to is how competitive any particular keyword is - for example, don't even bother trying to rank for the word "travel" - you'll never get ahead of the large travel sites, as they have teams of people focused on SEO and millions of dollars to spend on it. Search for the more unusual phrases and what are called "long tail" keywords ( a fancy way of saying keyword that are really sentences of three or more words strung together). If you were to focus on "travel tips for traveling to Antarctica" you'd have a better chance of getting a high page ranking in the SERPs....
